Lettuce leaves
1 cup uncooked quinoa
2 cups chicken broth
2 cans black beans (drained and rinsed)
1 red bell pepper chopped
1/4 onion chopped small
2 large avacados

1 t GF chili powder
1 t salt
1/2 t onion powder
2 t cumin
1/2 t garlic powder
1 T apple cider vinegar
1 T olive oil
Cook quinoa according to package (but with chicken broth instead of water). While it's cooking, chop bell pepper and onion and slice avocados When the quinoa is cooked add the rest of the ingredients except avocados Fill lettuce leafs with the mixture and add avocados on top.
For a little protein on the side, I'll eat 1 slice of turkey bacon or a little turkey sausage.
