Quinoa Sauerkraut


This was a quick and easy on the go filler-up.
I'd never tried Sauerkraut until about a month ago. I actually really like it a lot.
And the health benefits are awesome! Especially those of you trying to heal those insides of yours from the effects of gluten and dealing with celiacs!
It's got a ton of natural pro-biotics in it- and I sure love anything pickled :)



Quinoa Sauerkraut

2 cups cooked Red quinoa
1 can black beans
1 bell pepper chopped
about 1-2 Tablespoons olive oil
1/4 c bragg's vinegar
about 2-4 teaspoons chili powder (*western families brand is made on machinery that uses wheat and dairy products so watch out for that)
1/2 t Sea salt
1/4 t pepper
1/2 t garlic (or 1 clove)
1/2 onion chopped
Sauerkraut (optional- add as desired)

Really simple. Cook the quinoa as labeled on package. Add all the ingredients in a bowl- add the quinoa and let it sit for a couple hours (best if overnight to merry all the flavors)
*but if you're me, you're lazy and just eat it out of the pan after it's made :)
