Chicken Cacciatore


I'll share a recipe from one of the ones I was given by my wellness center. It's really good! Such a great flavor, and changes things up!

Chicken Cacciatore

3 chicken breasts, cooked, shredded
2 T olive oil
1 onion chopped
1 package mushrooms
1 green bell pepper diced
2 cloves garlic pressed
1 T oregano
1 t apple cider vinegar
1/4 c chicken broth
pepper to taste

Heat a large pot. Add olive oil and saute onion. Add the rest of the stuff except chicken and bring to a boil. Reduce heat, cover and simmer 25-30 min. Add chicken to pot. Simmer additional 10 min. Serve over Quinoa.

Also add a side of greens such as a salad, green beans, peas or broccoli.
