Potato Salad




Potato salad


4 large potatoes peeled and chopped into big chunks
4 large celery sticks chopped
4 hard boiled eggs chopped
1 cup Mayo
1 T Mustard
1/4 c fresh Parsley or 3 T dried
 1/4 c Apple cider vinegar
Onion powder
Paprika
1/2 t Salt 
1/2 t Pepper
dash or two of Stevia

*Additional optional add-ins:
chopped onions, sweet chopped pickles, sauerkraut

Cook the chopped potatoes in boiling water until they're just soft enough to eat. Drain water. Pour 1/8 c of the apple cider vinegar over the top and let cool. 
In a separate bowl mix the mayo, mustard, parsley, salt, pepper, stevia and the rest of the vinegar. Pour the mixture in with the chilled potatoes, add the celery, eggs and any additional toppings and mix in. Take your onion powder and sprinkle over the whole top of the potatoes and mix in. Then sprinkle smaller amounts over the top of the salad without mixing and let the salad chill and merry overnight.  (I eat it the same day as well but it's 10x's better the next day)
