Banana bread

I'm not going to brag or anything. I made an AMAZING banana bread the other night. My husband thought it was awesome (and he is not gluten free). Can't say enough about it, it's yummy. The real trick is to make sure the bananas are pretty chunky- don't mash the crud out of them or you won't get the same sweetness or texture.




Banana bread


1/4 c tapioca starch
1/4 c potato starch
1/2 c sorghum flour
1/8 c teff
1/2 c garbanzo bean flour
1/4+1/8 c millet flour
(any bean flour would work)
*whisk flours together until mixed-


1/8 c oil
1/2 c honey
2 T Stevia
1/8 c coconut sugar (or add more of the above sweeteners)
2 eggs
3 t baking pwdr
1 t arrowroot pwdr
1/2 t salt
3 T almond milk
1 t GF vanilla 
1/2 of raw chopped walnuts
1/3 bag of dairy free chocolate chips (semi sweet) *optional
3 bananas (add last!!)


Add all above ingredients together and stir.
Add 3 bananas, *lightly mashed

Cook at 350 degrees for 45 min.
