I love the idea that Silvana (In her Cooking for Isaiah cookbook) has 2 main flours that work for all her recipes. Way to make it less complicated! So many recipes call for multi flours here and there, and I feel like I'm buying all these new types, and coming across some I don't like. These should be pretty fail proof.
**My adapted version** I am sensitive to xanthom gum and white sugar makes me feel sick, note the changes. You can use whatever one you would like-
My adapted 'All purpose' flour blend
6 c brown rice flour
3 c tapioca flour
1 1/2 c potato starch
1 T salt
2 T arrowroot powder
Smaller version*
1 1/2 c brown rice flour
3/4 c tapioca flour
1/4 c potato starch
1/4 T salt
1/2 T arrowroot powder
Silvana's all purpose flour blend
6 c white rice flour
3 c tapioca flour
1 1/2 c potato starch
1 T salt
2 T xanthom gum
Mix all together and store in a big container for future recipes
My adapted Pancake Mix
9 c all purpose flour blend (above recipe)
1/2 c plus 1 T coconut sugar
3 T arrowroot powder
2 1/4 t salt
Smaller version*
2 1/4 c all purpose flour blend
1/8 plus 1/4 T coconut sugar
1 T arrowroot powder
3/4 t salt
Silvana's Pancake Mix
9 c all purpose flour blend (above recipe)
1 c plus 2 T sugar
3 T baking powder
2 1/4 t salt
Mix all together and store in a big container for future recipes
