Sun-dried tomato waffle bread!
I
know waffle bread has become a huge hit amongst gluten free-ers. I
tried making gluten free waffles and making it into a sandwich but I
didn't like it. This recipe is amazing taste wise and it holds together
extremely well. Soft, not gooey, and definitely not crumbly. Praise be
to the amazing recipe from Silvana Nardone. I got the recipe from her
book "Cooking for Isaiah".
This recipe is hers, but I
adapted the flour for my own personal needs- *The flour is what makes
this work so well- please don't substitute- Refer to Here for my adapted flour recipe
Silvanas Meatloaf sandwich recipe (adapted)
Sun dried tomato waffle bread
2 cups of GF flour mix
1/2 c drained and chopped oil-packed sun dried tomatoes (cut into small pea sizes)
1/2 t salt
2 large eggs lightly beaten
1/4 c olive oil
1 1/2 c almond milk
about 1/2 Italian seasoning
Whisk pancake flour mix with the sun-dried tomatoes and salt.
In another bowl whisk eggs, oil and milk.
Add to pancake mix. Stir together.
Spray waffle pan and 1/3 c batter in each square. Cook until crisp- let cool
Meatloaf Sandwich
Take 2 piece of sun-dried tomato bread
Add a slab of Meatloaf cooked from the previous day (and cold)

2 fresh tomatoes
fresh crisp romaine lettuce
