Vinegar black bean tacos


























Although these tacos look rather plain. They are packed full of flavor! I use to eat these all the time when I was not gluten, corn and dairy free- and I highly recommend if you can eat corn and dairy I would do a corn taco and sour cream on top.

Vinegar black bean tacos
Romaine Lettuce
2 tomatoes chopped
1/2 green pepper finely chopped 
1/2 red pepper finely chopped
1 can olives chopped
1/2 c olive oil
1/4 c red wine vinegar
1 t gluten free chili powder
1 t cumin
1/4 t salt (or to taste)
few shakes of pepper
1 can black beans
*(optional...  Shredded mozzerella, sour cream)



(It actually tastes 10x's more amazing in a warm taco shell if you can have corn. Also if you can have dairy, throw in a little  Mozzarella cheese with small dollops of daisy :)
Take some of the lettuce and set some leafs aside. Take about 3-4 large leafs and slice really thin strips.
Add the strips with the chopped tomato, peppers and olives into a bowl.
Add the oil, vinegar, cumin, chili powder, salt and pepper and mix everything thoroughly.
Take a can of black beans, dump the can into saucepan and add some cumin to flavor.

Take a leaf or taco shell, add the beans and then the mixture.
 *If you are not allergic, add some cheese and sour cream or greek yogurt on top.
