I Made a raw strawberry pie. It turned out great too.
I know a lot of raw pies out there use cashews for the "cream part"
But I have to share some sad news that I think I am sensitive to cashews. Ok fine, not "think"- try "know". Tears. Honestly I don't know what the heck is going on. It's like my body is messing with me saying "Oh, well now that you're allergic to gluten, how bout try some corn to go with it, ooohhh now some dairy- Cashews anyone? Pineapple? Xanthum gum?
Ya it's pretty much freaking me out.
My husband said a guy at work asked him if I was going to turn into one of those people who become allergic to everything and have to live off an IV. Maybe that was a joke.
But inside it made me shiver. That was a scary comment, and I didn't like it one bit.
I came across a book containing some info about getting off gluten and how other allergies develop- dairy being the main one. I'll have to share some info another time.
Don't freak out about my "secret cream" ingredient- you can't taste it at all, I promise!
Raw strawberry cream
2 c fresh strawberries
2 avocados
about 1/2 c agave *or more if desired
1/2 c lemon juice
1/2 c coconut oil, melted
pinch of salt
Blend all ingredients together add to crust
Macadamia crust
2 c Macadamia Nuts soaked
2 tbls Coconut Oil, melted
1 tbls Agave Nectar
Pinch of Salt
Blend all ingredients together (very well)
Spread some coconut flakes on bottom of pan (so it doesn't stick)
spread out the crust as then as possible (you may have to use hands)
