*gluten free, corn free (not dairy free)
Fiesta Potato Salad
4 Potatos
1 larg green pepper
2 handfuls of cherry or grape tomatoes
1 yellow zucchini (grated)
1/2-1 head romaine lettuce chopped
Fresh salsa
cheddar cheese grated
Sour cream
1 can black beans
1 small can diced green chiles
Chili powder
Salt and pepper to taste
Zest of lime or lemon
Wash potatoes thoroughly. Poke a couple holes in them with a fork, place directly onto the oven rack and cook for 1 hr. at 400 degrees.
When they are done add the cheese and let it melt. Add the rest of the toppings to your liking.
Sprinkle with chili powder and salt and pepper.
