I was out of groceries- too tired and worn out to run to the store with small kids-
So I decided to just throw something together- It's similar to something I made before a long time ago but I didn't know what the recipe was and so I just made it up.
My father-in-law happened to bring me two large zucchini from the garden and so I started from there.
Zucchini Goulash
1 Large zucchini
1 can red beans
1 can olives
1 can diced tomatoes
Italian seasoning
1/2 t Onion powder
Salt and Pepper
Agave
1 cup brown rice
Nutritional yeast (optional)
Cheddar Cheese (optional)
First I sliced up my zucchini and threw it in the pan with some oil, S and P, and threw in about 1/2 T Italian Seasoning. I cooked until it was just about translucent.
While that was cooking, I put my rice in my rice maker-
I then added the drained and rinsed beans, the olives and the full can of tomatoes, onion powder and sprinkled some more S and P with a drizzle of agave to sweeten the tomato sauce a bit.
When both the rice and mixture is done put it together and while it's still hot add some cheese on top so it will melt or Nutritional yeast.
