Made up this little recipe with the ingredients I had on hand the other morning. Add it with a egg on the side or scrambled eggs. And I also use corn syrup free ketchup to the meal as well :)
Breakfast Potatoes
2 red potatose scrubbed and chopped
2 cloves garlic
1/4 t oregeno
1 t basil
1/2 t salt
1 medium zucchini
1 bell pepper
Saute the potato and garlic together until the potato start to become translucent. Add the spices and then the zucchini and bell pepper and cook until tender. Squeeze some lemon juice on top.
Easy Peasy.
